Ingredients
- Cauliflower rice - 400 grams
- Pork tenderloin, thinly sliced - 200 grams
- Eggs - 2 large
- Garlic, minced - 2 cloves
- Shallots, finely chopped - 1 medium
- Fish sauce - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Green onions, chopped - 2 stalks
- Cilantro, chopped - 2 tablespoons
- Lime wedges - for serving
- Vegetable oil - 2 tablespoons
- Black pepper - to taste
Steps
- In a bowl, marinate the sliced pork tenderloin with fish sauce, soy sauce, and black pepper for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and chopped shallots, sautéing until fragrant.
- Add the marinated pork to the pan and stir-fry until it's cooked through and golden brown, about 5-7 minutes. Remove the pork from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Add the cauliflower rice and stir-fry for about 5 minutes until slightly tender.
- Push the cauliflower rice to one side of the pan, crack the eggs into the space, and scramble them until fully cooked. Mix the scrambled eggs into the cauliflower rice.
- Add the cooked pork back into the pan along with oyster sauce and chopped green onions. Stir everything together and cook for another 2-3 minutes.
- Remove from heat and stir in the chopped cilantro. Serve hot with lime wedges on the side.
