- Cauliflower - 400 grams, riced
- Chicken breast - 200 grams, diced
- Egg - 2 large
- Garlic - 3 cloves, minced
- Green onion - 2 stalks, chopped
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, julienned
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Cilantro - for garnish
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Add the diced chicken breast to the skillet and cook until browned and cooked through, around 5-7 minutes.
- Push the chicken to one side of the skillet, and add the remaining tablespoon of olive oil.
- Add the riced cauliflower, bell pepper, and carrot to the skillet and stir-fry for about 5 minutes until the vegetables are tender.
- Make a well in the center of the skillet, crack the eggs into the well, and scramble them until cooked through.
- Mix the scrambled eggs with the vegetables and chicken.
- Add the soy sauce, fish sauce, oyster sauce, and black pepper, stirring well to combine all the ingredients.
- Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot, garnished with chopped green onions and cilantro.
