Ingredients

  • Cauliflower - 400 grams, riced
  • Chicken breast - 200 grams, diced
  • Egg - 2 large
  • Garlic - 3 cloves, minced
  • Green onion - 2 stalks, chopped
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Cilantro - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the diced chicken breast to the skillet and cook until browned and cooked through, around 5-7 minutes.
  4. Push the chicken to one side of the skillet, and add the remaining tablespoon of olive oil.
  5. Add the riced cauliflower, bell pepper, and carrot to the skillet and stir-fry for about 5 minutes until the vegetables are tender.
  6. Make a well in the center of the skillet, crack the eggs into the well, and scramble them until cooked through.
  7. Mix the scrambled eggs with the vegetables and chicken.
  8. Add the soy sauce, fish sauce, oyster sauce, and black pepper, stirring well to combine all the ingredients.
  9. Cook for an additional 2-3 minutes until everything is heated through.
  10. Serve hot, garnished with chopped green onions and cilantro.
