Steps
- Cook the jasmine rice according to package instructions and set aside to cool.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2 minutes.
- Add the diced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Stir in the bell pepper, carrot, and green beans, cooking for an additional 3-4 minutes until the vegetables are slightly tender.
- Push the chicken and vegetables to one side of the skillet, crack the eggs into the empty side, and scramble them until fully cooked.
- Add the cooked rice to the skillet, mixing everything together well.
- Pour in the soy sauce and oyster sauce, stirring to coat the rice evenly. Season with salt and pepper to taste.
- Remove from heat and stir in the chopped cilantro.
- Serve hot with lime wedges on the side.
