  • Jasmine rice - 150 grams

  • Carrot, julienned - 1 medium
  • Green beans, chopped - 100 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges - to serve
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the jasmine rice according to package instructions and set aside to cool.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2 minutes.
  4. Add the diced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  5. Stir in the bell pepper, carrot, and green beans, cooking for an additional 3-4 minutes until the vegetables are slightly tender.
  6. Push the chicken and vegetables to one side of the skillet, crack the eggs into the empty side, and scramble them until fully cooked.
  7. Add the cooked rice to the skillet, mixing everything together well.
  8. Pour in the soy sauce and oyster sauce, stirring to coat the rice evenly. Season with salt and pepper to taste.
  9. Remove from heat and stir in the chopped cilantro.
  10. Serve hot with lime wedges on the side.
