  • Oyster sauce (vegetarian) - 1 tablespoon
  • Fresh Thai basil leaves - 30 grams
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste
  • Lime wedges - for serving

Steps

  1. Cook the jasmine rice according to package instructions and set aside to cool.
  2. In a large frying pan or wok, heat the vegetable oil over medium heat.
  3. Add minced garlic and chopped chilies, sautéing for about 1 minute until fragrant.
  4. Stir in the diced red bell pepper, carrot, and mushrooms, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Add the cooked rice to the pan, breaking up any clumps, and stir-fry for about 2 minutes.
  6. Pour in the soy sauce and vegetarian oyster sauce, mixing well to combine all the ingredients.
  7. Toss in the fresh Thai basil leaves and chopped green onions, stirring until the basil is wilted.
  8. Season with salt and pepper to taste, then remove from heat.
  9. Serve hot with lime wedges on the side.
