Ingredients

  • Cauliflower - 400 grams, grated
  • Chicken breast - 300 grams, diced
  • Garlic - 4 cloves, minced
  • Thai bird's eye chilies - 2, finely chopped (adjust to taste)
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Fresh Thai basil leaves - 1 cup, loosely packed
  • Vegetable oil - 2 tablespoons
  • Eggs - 2, for frying
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
  2. Add the minced garlic and chopped chilies, cooking until fragrant (about 30 seconds).
  3. Increase the heat and add the diced chicken breast, stirring frequently until cooked through (about 5-7 minutes).
  4. Pour in the soy sauce, oyster sauce, and fish sauce, stirring to combine and cook for another 2 minutes.
  5. Add the fresh Thai basil leaves and mix well until wilted, then remove the pan from heat.
  6. In a separate skillet, heat the remaining tablespoon of vegetable oil over medium heat.
  7. Crack the eggs into the skillet, cooking to your preference (sunny-side up or scrambled).
  8. While the eggs are cooking, prepare the cauliflower rice by sautéing the grated cauliflower in a pan over medium heat with a pinch of salt and pepper for about 5-7 minutes until tender.
  9. To serve, place a portion of cauliflower rice on each plate, top with the chicken mixture, and finish with a cooked egg on top.
