- Ground chicken - 200 grams
- Eggs - 2 large
- Thai basil leaves - 50 grams
- Garlic, minced - 3 cloves
- Thai bird's eye chilies, chopped - 2
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Fish sauce - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Sugar - 1 teaspoon
- Lime wedges - 2 for serving
Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and chopped chilies, frying for about 30 seconds until fragrant.
- Add the ground chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
- Stir in the soy sauce, oyster sauce, fish sauce, and sugar, mixing well to combine.
- Add the cooked jasmine rice to the pan, breaking up any clumps and mixing it thoroughly with the chicken and sauce for another 3-4 minutes.
- Push the rice to one side of the pan and crack the eggs into the empty space, scrambling them until fully cooked.
- Fold the scrambled eggs into the rice mixture and add the Thai basil leaves, stirring until wilted.
- Remove from heat and serve hot with lime wedges on the side.
