Ingredients

  • Cooked jasmine rice - 300 grams
  • Ground chicken - 200 grams
  • Eggs - 2 large
  • Thai basil leaves - 50 grams
  • Garlic, minced - 3 cloves
  • Thai bird's eye chilies, chopped - 2
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Sugar - 1 teaspoon
  • Lime wedges - 2 for serving

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and chopped chilies, frying for about 30 seconds until fragrant.
  3. Add the ground chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the soy sauce, oyster sauce, fish sauce, and sugar, mixing well to combine.
  5. Add the cooked jasmine rice to the pan, breaking up any clumps and mixing it thoroughly with the chicken and sauce for another 3-4 minutes.
  6. Push the rice to one side of the pan and crack the eggs into the empty space, scrambling them until fully cooked.
  7. Fold the scrambled eggs into the rice mixture and add the Thai basil leaves, stirring until wilted.
  8. Remove from heat and serve hot with lime wedges on the side.
