Ingredients

  • Jasmine rice - 200 grams
  • Ground chicken or beef - 200 grams
  • Thai basil leaves - 30 grams
  • Garlic - 3 cloves, minced
  • Bird's eye chili - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Eggs - 2, for frying
  • Cucumber - 1/2, sliced for garnish
  • Lime wedges - 2, for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
  2. While the rice is cooking, heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and chopped bird's eye chili to the skillet, stirring for about 30 seconds until fragrant.
  4. Add the ground chicken or beef and cook until browned and fully cooked, about 5-7 minutes.
  5. Stir in the soy sauce, oyster sauce, and sugar, mixing well to coat the meat evenly.
  6. Add the cooked jasmine rice to the skillet and mix thoroughly with the meat and sauce, cooking for an additional 2-3 minutes.
  7. Fold in the Thai basil leaves and cook until wilted, about 1 minute.
  8. In a separate pan, fry the eggs sunny-side up or to your preference.
  9. Serve the Khao Pad Kra Pao hot, topped with a fried egg, garnished with cucumber slices and lime wedges.
