Ingredients

  • Jasmine rice - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Shallots, thinly sliced - 2 medium
  • Carrot, julienned - 1 medium
  • Bell pepper, thinly sliced - 1 medium
  • Green beans, chopped - 100 grams
  • Soy sauce - 2 tablespoons
  • Vegetarian oyster sauce - 1 tablespoon
  • Curry powder - 1 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges - 2 for serving
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. Drain the rice and cook it in a rice cooker or on the stove according to package instructions. Set aside when done.
  3. In a large frying pan or wok, heat the vegetable oil over medium heat.
  4. Add the minced garlic and sliced shallots, sauté for 2-3 minutes until fragrant.
  5. Add the julienned carrot, sliced bell pepper, and chopped green beans. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  6. Stir in the cooked jasmine rice, soy sauce, vegetarian oyster sauce, and curry powder. Mix well to combine all ingredients.
  7. Season with salt and black pepper to taste, and continue cooking for another 2-3 minutes, stirring frequently.
  8. Remove from heat and stir in the chopped cilantro.
  9. Serve hot with lime wedges on the side for squeezing over the dish.
