- Jasmine rice - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Shallots, thinly sliced - 2 medium
- Carrot, julienned - 1 medium
- Bell pepper, thinly sliced - 1 medium
- Green beans, chopped - 100 grams
- Soy sauce - 2 tablespoons
- Vegetarian oyster sauce - 1 tablespoon
- Curry powder - 1 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lime wedges - 2 for serving
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- Drain the rice and cook it in a rice cooker or on the stove according to package instructions. Set aside when done.
- In a large frying pan or wok, heat the vegetable oil over medium heat.
- Add the minced garlic and sliced shallots, sauté for 2-3 minutes until fragrant.
- Add the julienned carrot, sliced bell pepper, and chopped green beans. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Stir in the cooked jasmine rice, soy sauce, vegetarian oyster sauce, and curry powder. Mix well to combine all ingredients.
- Season with salt and black pepper to taste, and continue cooking for another 2-3 minutes, stirring frequently.
- Remove from heat and stir in the chopped cilantro.
- Serve hot with lime wedges on the side for squeezing over the dish.
