Ingredients

  • Jasmine rice - 200 grams
  • Chicken thighs, boneless and skinless - 250 grams
  • Coconut milk - 200 ml
  • Yellow curry paste - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Shallots, finely chopped - 2 medium
  • Garlic, minced - 3 cloves
  • Chicken broth - 200 ml
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Green onions, sliced - 2 tablespoons
  • Chili flakes (optional) - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.
  2. In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped shallots and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the pan and cook until browned on all sides, about 5-7 minutes.
  5. Mix in the yellow curry paste and stir well to coat the chicken.
  6. Pour in the coconut milk and chicken broth, then bring to a gentle simmer.
  7. Add the fish sauce and brown sugar, stirring until dissolved. Allow to simmer for 10 minutes until the chicken is cooked through and tender.
  8. While the chicken is cooking, prepare the rice. In a separate pot, bring 400 ml of water to a boil, add the soaked and drained rice, and cook covered on low heat for about 15 minutes or until the rice is fluffy and the water is absorbed.
  9. Once the chicken is cooked, remove it from the sauce and shred it with two forks. Return the shredded chicken to the sauce and mix well.
  10. Add lime juice to the chicken mixture and adjust seasoning if necessary.
  11. To serve, place a generous portion of rice on each plate, top with the chicken mixture, and garnish with chopped cilantro, sliced green onions, and chili flakes if desired.
