- Jasmine rice - 200 grams
- Chicken thighs, boneless and skinless - 250 grams
- Coconut milk - 200 ml
- Yellow curry paste - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Shallots, finely chopped - 2 medium
- Garlic, minced - 3 cloves
- Chicken broth - 200 ml
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Green onions, sliced - 2 tablespoons
- Chili flakes (optional) - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.
- In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped shallots and sauté until translucent, about 3 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs to the pan and cook until browned on all sides, about 5-7 minutes.
- Mix in the yellow curry paste and stir well to coat the chicken.
- Pour in the coconut milk and chicken broth, then bring to a gentle simmer.
- Add the fish sauce and brown sugar, stirring until dissolved. Allow to simmer for 10 minutes until the chicken is cooked through and tender.
- While the chicken is cooking, prepare the rice. In a separate pot, bring 400 ml of water to a boil, add the soaked and drained rice, and cook covered on low heat for about 15 minutes or until the rice is fluffy and the water is absorbed.
- Once the chicken is cooked, remove it from the sauce and shred it with two forks. Return the shredded chicken to the sauce and mix well.
- Add lime juice to the chicken mixture and adjust seasoning if necessary.
- To serve, place a generous portion of rice on each plate, top with the chicken mixture, and garnish with chopped cilantro, sliced green onions, and chili flakes if desired.
