- Jasmine rice - 150 grams
- Vegetable broth - 400 ml
- Coconut milk - 200 ml
- Carrot - 1 medium, julienned
- Bell pepper (red or yellow) - 1 medium, sliced
- Green beans - 100 grams, chopped
- Shiitake mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 inch, grated
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Brown sugar - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Fried egg noodles - 50 grams
- Peanut oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the broth is absorbed.
- In a large skillet or wok, heat the peanut oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms, julienned carrot, sliced bell pepper, and chopped green beans to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Pour in the coconut milk, soy sauce, lime juice, and brown sugar. Stir well and let it simmer on low heat for an additional 5 minutes.
- Once the rice is cooked, fluff it with a fork and add it to the skillet, mixing thoroughly with the vegetable sauce.
- Taste and adjust seasoning with salt and black pepper as desired.
- To serve, divide the rice mixture onto plates and top with crispy fried egg noodles and a sprinkle of chopped cilantro.
