Ingredients

  • Jasmine rice - 150 grams
  • Vegetable broth - 400 ml
  • Coconut milk - 200 ml
  • Carrot - 1 medium, julienned
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Green beans - 100 grams, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 inch, grated
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Fried egg noodles - 50 grams
  • Peanut oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the broth is absorbed.
  3. In a large skillet or wok, heat the peanut oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the sliced shiitake mushrooms, julienned carrot, sliced bell pepper, and chopped green beans to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  5. Pour in the coconut milk, soy sauce, lime juice, and brown sugar. Stir well and let it simmer on low heat for an additional 5 minutes.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet, mixing thoroughly with the vegetable sauce.
  7. Taste and adjust seasoning with salt and black pepper as desired.
  8. To serve, divide the rice mixture onto plates and top with crispy fried egg noodles and a sprinkle of chopped cilantro.
