Ingredients

  • Jasmine rice - 150 grams
  • Crab meat (fresh or canned) - 100 grams
  • Garlic, minced - 2 cloves
  • Shallots, finely chopped - 2 medium
  • Green onion, chopped - 2 stalks
  • Egg - 1 large
  • Soy sauce (low sodium) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain well.
  2. In a pot, bring 300 ml of water to a boil, add the soaked rice, and reduce the heat to low. Cover and simmer for about 15 minutes or until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
  4. Push the garlic and shallots to the side of the pan and crack the egg into the center. Scramble the egg until fully cooked, then mix it with the sautéed ingredients.
  5. Add the cooked jasmine rice to the pan, breaking up any clumps. Stir in the crab meat, soy sauce, fish sauce, and black pepper. Mix everything well and cook for another 3-5 minutes until heated through.
  6. Remove from heat and stir in the chopped green onions and cilantro.
  7. Serve hot with lime wedges on the side for squeezing over the dish.
