- Green onion - 2, chopped
- Chili flakes - 1 teaspoon (adjust to taste)

Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Allow it to cool slightly.
- Heat the coconut oil in a large skillet or wok over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the julienned carrot and sliced bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Stir in the green peas and cooked jasmine rice. Mix well to combine all ingredients.
- Pour in the soy sauce and lime juice, stirring continuously for 2-3 minutes until everything is heated through and well coated.
