Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Firm tofu - 100 grams, crumbled
  • Carrot - 1 medium, diced
  • Green peas - 50 grams (frozen or fresh)
  • Red bell pepper - 1 small, diced
  • Spring onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegan) - 1 tablespoon
  • Lime - 1, juiced
  • Fresh coriander - 2 tablespoons, chopped
  • Black pepper - to taste
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  3. While the rice is cooking, heat vegetable oil in a large pan or wok over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the crumbled tofu and cook for 3-4 minutes until slightly golden.
  6. Stir in the diced carrot and red bell pepper, cooking for another 3-4 minutes until the vegetables start to soften.
  7. Add the green peas and cooked rice to the pan, mixing well.
  8. Pour in the soy sauce, vegan oyster sauce, and sesame oil, stirring everything together for another 2-3 minutes to heat through.
  9. Remove from heat, stir in lime juice, chopped spring onions, and fresh coriander, and season with black pepper to taste.
  10. Serve hot, garnished with additional coriander if desired.
