Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Firm tofu - 100 grams, crumbled
- Carrot - 1 medium, diced
- Green peas - 50 grams (frozen or fresh)
- Red bell pepper - 1 small, diced
- Spring onions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Oyster sauce (vegan) - 1 tablespoon
- Lime - 1, juiced
- Fresh coriander - 2 tablespoons, chopped
- Black pepper - to taste
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the crumbled tofu and cook for 3-4 minutes until slightly golden.
- Stir in the diced carrot and red bell pepper, cooking for another 3-4 minutes until the vegetables start to soften.
- Add the green peas and cooked rice to the pan, mixing well.
- Pour in the soy sauce, vegan oyster sauce, and sesame oil, stirring everything together for another 2-3 minutes to heat through.
- Remove from heat, stir in lime juice, chopped spring onions, and fresh coriander, and season with black pepper to taste.
- Serve hot, garnished with additional coriander if desired.
