  • Cooked jasmine rice - 300 grams (about 2 cups)
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 100 grams (about 1/2 cup), frozen or fresh
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 50 ml
  • Lime - 1, juiced
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and chopped shallots, and sauté for 1-2 minutes until fragrant.
  3. Stir in the diced carrot and bell pepper, and cook for another 3-4 minutes until they start to soften.
  4. Add the green peas and cooked jasmine rice to the pan, breaking up any clumps of rice.
  5. Pour the soy sauce and vegetable broth over the mixture, and stir well to combine.
  6. Cook for an additional 5-7 minutes, stirring occasionally, until everything is heated through.
  7. Remove from heat and stir in the lime juice, chopped cilantro, salt, and black pepper to taste.
  8. Serve hot, garnished with extra cilantro if desired.
