- Shallots - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams (about 1/2 cup), frozen or fresh
- Soy sauce - 2 tablespoons
- Vegetable broth - 50 ml
- Lime - 1, juiced
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and chopped shallots, and sauté for 1-2 minutes until fragrant.
- Stir in the diced carrot and bell pepper, and cook for another 3-4 minutes until they start to soften.
- Add the green peas and cooked jasmine rice to the pan, breaking up any clumps of rice.
- Pour the soy sauce and vegetable broth over the mixture, and stir well to combine.
- Cook for an additional 5-7 minutes, stirring occasionally, until everything is heated through.
- Remove from heat and stir in the lime juice, chopped cilantro, salt, and black pepper to taste.
- Serve hot, garnished with extra cilantro if desired.
