Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili - 1, sliced (adjust to taste)
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, diced
  • Soy sauce - 2 tablespoons
  • Oyster mushroom - 100 grams, chopped
  • Thai basil leaves - 30 grams
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine it with 300 ml of water in a saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  2. In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and sliced red chili, and sauté for about 1 minute until fragrant.
  3. Add the sliced bell pepper, julienned carrot, and diced zucchini to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  4. Stir in the chopped oyster mushrooms and cook for another 2-3 minutes until they soften.
  5. Add the cooked jasmine rice to the pan and pour in the soy sauce. Mix everything well, ensuring the rice is evenly coated with the sauce, and stir-fry for an additional 2 minutes.
  6. Remove the pan from heat and fold in the Thai basil leaves, allowing them to wilt slightly from the residual heat.
  7. Taste and adjust seasoning with salt and pepper as needed. Serve hot with lime wedges on the side for an extra zing.
