Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili - 1, sliced (adjust to taste)
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, diced
- Soy sauce - 2 tablespoons
- Oyster mushroom - 100 grams, chopped
- Thai basil leaves - 30 grams
- Lime - 1, cut into wedges
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine it with 300 ml of water in a saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and sliced red chili, and sauté for about 1 minute until fragrant.
- Add the sliced bell pepper, julienned carrot, and diced zucchini to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- Stir in the chopped oyster mushrooms and cook for another 2-3 minutes until they soften.
- Add the cooked jasmine rice to the pan and pour in the soy sauce. Mix everything well, ensuring the rice is evenly coated with the sauce, and stir-fry for an additional 2 minutes.
- Remove the pan from heat and fold in the Thai basil leaves, allowing them to wilt slightly from the residual heat.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot with lime wedges on the side for an extra zing.
