- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the rice is cooked. Fluff with a fork and set aside.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and diced onion, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the diced carrot and red bell pepper to the skillet, cooking for another 5 minutes until slightly tender.
- Stir in the green peas and cook for an additional 2 minutes.
- Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and lime juice, stirring well to combine all ingredients evenly.
- Season with salt, black pepper, and chili flakes if using. Cook for another 3-5 minutes, allowing the rice to crisp slightly on the bottom.
- Remove from heat and stir in the chopped fresh coriander before serving.
