- Jasmine rice - 150 grams
- Water - 300 milliliters
- Coconut oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallots, diced - 2
- Carrot, julienned - 1 medium
- Bell pepper, sliced - 1 medium (any color)
- Green peas - 100 grams
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Green onions, sliced - 2 tablespoons
- Black pepper - to taste
- Red chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork and set aside.
- In a large skillet or wok, heat the coconut oil over medium heat. Add the minced garlic and diced shallots, sautéing for about 2-3 minutes until fragrant.
- Add the julienned carrot and sliced bell pepper to the skillet, and stir-fry for another 3-4 minutes until the vegetables are tender.
- Stir in the green peas and cooked rice, mixing well to combine all ingredients.
- Pour the soy sauce and lime juice over the rice mixture. Toss everything together until the rice is evenly coated and heated through.
- Remove from heat, and stir in the chopped cilantro and sliced green onions. Season with black pepper and red chili flakes if desired.
- Serve hot, garnished with extra cilantro and lime wedges on the side.
