Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Coconut oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallots, diced - 2
  • Carrot, julienned - 1 medium
  • Bell pepper, sliced - 1 medium (any color)
  • Green peas - 100 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Green onions, sliced - 2 tablespoons
  • Black pepper - to taste
  • Red chili flakes - optional, to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork and set aside.
  3. In a large skillet or wok, heat the coconut oil over medium heat. Add the minced garlic and diced shallots, sautéing for about 2-3 minutes until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the skillet, and stir-fry for another 3-4 minutes until the vegetables are tender.
  5. Stir in the green peas and cooked rice, mixing well to combine all ingredients.
  6. Pour the soy sauce and lime juice over the rice mixture. Toss everything together until the rice is evenly coated and heated through.
  7. Remove from heat, and stir in the chopped cilantro and sliced green onions. Season with black pepper and red chili flakes if desired.
  8. Serve hot, garnished with extra cilantro and lime wedges on the side.
