- Carrot - 1 medium, julienned
- Bell pepper (red) - 1, thinly sliced
- Green beans - 100 grams, chopped
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine with 300 ml of water in a pot and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- In a large frying pan or wok, heat the coconut oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the julienned carrot, bell pepper, and chopped green beans to the pan, stirring frequently for about 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the cooked jasmine rice, soy sauce, and lime juice, mixing thoroughly to combine all ingredients. Cook for an additional 3-4 minutes until heated through.
- Season with salt and black pepper to taste. Remove from heat and gently fold in the chopped cilantro and green onions.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
