- Jasmine rice - 200 grams
- Water - 400 ml
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Thai basil leaves - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 400 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the diced carrot and bell pepper to the skillet. Stir-fry for about 3-4 minutes until they start to soften.
- Stir in the green peas and cooked jasmine rice, mixing everything well. Pour in the soy sauce and lime juice, and stir-fry for another 2-3 minutes, ensuring the rice is heated through and evenly coated with the sauce.
- Add the chopped Thai basil, salt, black pepper, and chili flakes if using. Mix well and cook for an additional minute before removing from heat.
- Serve hot, garnished with extra Thai basil leaves if desired.
