Ingredients

  • Jasmine rice - 200 grams
  • Water - 500 ml
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallots, finely chopped - 2
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Green peas - 100 grams
  • Soy sauce - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1 teaspoon (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, bring 500 ml of water to a boil. Drain the soaked rice and add it to the boiling water. Cook for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and golden.
  4. Add the diced carrot and bell pepper to the skillet, stir-frying for about 3-4 minutes until they begin to soften.
  5. Stir in the green peas and cooked jasmine rice. Mix well to combine all ingredients.
  6. Add 3 tablespoons of soy sauce, 1 tablespoon of lime juice, and season with salt and black pepper to taste. Stir-fry for an additional 3-4 minutes, allowing the flavors to meld.
  7. Remove from heat and mix in the chopped cilantro. If desired, sprinkle with chili flakes for an extra kick.
  8. Serve hot, garnished with additional cilantro and lime wedges.
