- Jasmine rice - 1 cup (200g)
- Coconut milk - 1/2 cup (120ml)
- Vegetable broth - 1/2 cup (120ml)
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Green peas - 1/2 cup (75g)
- Garlic - 2 cloves, minced
- Fresh basil - 1/4 cup, chopped
- Soy sauce - 2 tablespoons (30ml)
- Lime juice - 1 tablespoon (15ml)
- Salt - to taste
- Black pepper - to taste
- Peanut oil - 2 tablespoons (30ml)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let stand for 5 minutes.
- While the rice is cooking, heat the peanut oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced carrot, bell pepper, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the green peas and cook for an additional 2 minutes.
- Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Pour in the soy sauce and lime juice, and mix well to combine. Season with salt and black pepper to taste.
- Finally, fold in the chopped fresh basil and stir until evenly distributed. Serve hot.
