  • Red bell pepper - 1 medium (about 120 grams), sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Fresh basil leaves - 10 grams, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, then set it aside to cool slightly.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the julienned carrot and sliced red bell pepper to the skillet, stirring frequently for about 3-4 minutes until they start to soften.
  4. Stir in the cooked jasmine rice, soy sauce, and diced mango. Mix well to combine all ingredients and cook for another 2-3 minutes until heated through.
  5. Add the chopped green onions and basil leaves, mixing gently. Season with salt and black pepper to taste.
