- Jasmine rice - 150 grams
- Coconut milk - 200 ml
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, diced
- Green peas - 50 grams
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh basil - 1/2 cup, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, combine the soaked rice and coconut milk with 200 ml of water. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.
- While the rice is cooking, heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and sliced shallots, and sauté until fragrant and translucent.
- Add the julienned carrot, diced red bell pepper, and green peas to the skillet. Stir-fry the vegetables for about 5 minutes until tender but still crisp.
- Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Pour in soy sauce and lime juice, mixing everything together well. Season with salt and black pepper to taste.
- Finally, fold in the chopped fresh basil and stir until just wilted. Serve hot, garnished with additional basil if desired.
