Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, diced
  • Green peas - 50 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil - 1/2 cup, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, combine the soaked rice and coconut milk with 200 ml of water. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.
  3. While the rice is cooking, heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and sliced shallots, and sauté until fragrant and translucent.
  4. Add the julienned carrot, diced red bell pepper, and green peas to the skillet. Stir-fry the vegetables for about 5 minutes until tender but still crisp.
  5. Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Pour in soy sauce and lime juice, mixing everything together well. Season with salt and black pepper to taste.
  6. Finally, fold in the chopped fresh basil and stir until just wilted. Serve hot, garnished with additional basil if desired.
