- Jasmine rice - 150 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallot - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams, frozen
- Nam Prik Pao (Thai chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spring onions - 2, chopped
- Coriander leaves - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium pot, cook the soaked rice with 300 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and shallot, sautéing until fragrant and translucent, about 2 minutes.
- Add the diced carrot and bell pepper to the skillet, cooking for an additional 3-4 minutes until they begin to soften.
- Stir in the green peas and cook for another 2 minutes.
- Add the cooked rice to the skillet, breaking up any clumps. Stir in the Nam Prik Pao, soy sauce, salt, and black pepper, mixing well to combine all ingredients evenly.
- Cook for an additional 3-4 minutes, stirring occasionally until everything is heated through.
- Remove from heat and stir in the chopped spring onions. Garnish with fresh coriander leaves before serving.
