- Cauliflower - 1 medium head, grated into rice
- Pork tenderloin - 250 grams, thinly sliced
- Carrot - 1 medium, julienned
- Bell pepper (red or yellow) - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Coconut aminos - 2 tablespoons
- Fish sauce - 1 tablespoon
- Olive oil - 2 tablespoons
- Fresh cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Pepper - to taste
Steps
- Prepare the cauliflower rice by grating the cauliflower head using a box grater or food processor until it resembles rice.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced pork and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the skillet and stir-fry for about 3-4 minutes until they begin to soften.
- Stir in the cauliflower rice and cook for an additional 5 minutes, stirring occasionally until the cauliflower is tender.
- Return the cooked pork to the skillet and add coconut aminos and fish sauce. Mix well and cook for another 2-3 minutes until everything is heated through.
- Remove from heat and stir in the chopped green onions and cilantro.
- Serve hot with lime wedges on the side for squeezing over the dish.
