Ingredients

  • Cauliflower - 1 medium head, grated into rice
  • Pork tenderloin - 250 grams, thinly sliced
  • Carrot - 1 medium, julienned
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Coconut aminos - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the cauliflower rice by grating the cauliflower head using a box grater or food processor until it resembles rice.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced pork and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the skillet and stir-fry for about 3-4 minutes until they begin to soften.
  5. Stir in the cauliflower rice and cook for an additional 5 minutes, stirring occasionally until the cauliflower is tender.
  6. Return the cooked pork to the skillet and add coconut aminos and fish sauce. Mix well and cook for another 2-3 minutes until everything is heated through.
  7. Remove from heat and stir in the chopped green onions and cilantro.
  8. Serve hot with lime wedges on the side for squeezing over the dish.
