Ingredients

  • Jasmine rice - 150g
  • Water - 300ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Carrot - 1 small, diced
  • Bell pepper - 1 small, diced
  • Green peas - 100g, frozen or fresh
  • Soy sauce - 2 tablespoons
  • Vegan oyster sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon (optional)
  • Green onions - 2, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 300ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and diced onion, and sauté for 2-3 minutes until the onion becomes translucent.
  3. Add the diced carrot and bell pepper to the skillet, cooking for another 3-4 minutes until they soften. Stir in the green peas and cook for an additional 2 minutes.
  4. Once the vegetables are cooked, add the cooked jasmine rice to the skillet. Pour in the soy sauce and vegan oyster sauce, and stir well to combine all ingredients. Cook for another 5 minutes, stirring occasionally to ensure the rice is heated through.
  5. If desired, sprinkle chili flakes for some heat, and stir in the sliced green onions and chopped cilantro just before serving.
  6. Serve hot with lime wedges on the side for squeezing over the dish.
