- Ripe mango - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook the rice according to the package instructions, typically using 1.5 cups of water for 150 grams of rice.
- While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
- Add the diced red bell pepper and julienned carrot to the skillet, stirring occasionally for about 3-4 minutes until the vegetables are tender.
- Once the rice is cooked, add it to the skillet along with the soy sauce, lime juice, and diced mango. Stir well to combine all the ingredients.
- Continue to cook for an additional 3-5 minutes, allowing the flavors to meld together and the rice to heat through.
- Season with salt and black pepper to taste, then stir in the chopped green onions and cilantro just before serving.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
