- Jasmine rice - 200 grams
- Coconut oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Green peas - 100 grams, frozen or fresh
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh basil - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped
- Salt - to taste
- Pepper - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 20 minutes before draining.
- In a medium pot, cook the soaked rice with 300 ml of water. Bring to a boil, cover, and reduce heat to low. Cook for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
- In a large skillet or wok, heat coconut oil over medium heat. Add minced garlic and chopped shallots, sauté for 2-3 minutes until fragrant and translucent.
- Add diced carrot, bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until vegetables start to soften.
- Add the cooked rice to the skillet along with green peas, soy sauce, and lime juice. Stir well to combine and heat through, about 3-4 minutes.
- Mix in chopped basil and cilantro, and season with salt, pepper, and chili flakes if using. Cook for another minute.
- Serve hot, garnished with additional fresh herbs if desired.
