Ingredients

  • Jasmine rice - 200 grams
  • Coconut oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Green peas - 100 grams, frozen or fresh
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Salt - to taste
  • Pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 20 minutes before draining.
  2. In a medium pot, cook the soaked rice with 300 ml of water. Bring to a boil, cover, and reduce heat to low. Cook for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
  3. In a large skillet or wok, heat coconut oil over medium heat. Add minced garlic and chopped shallots, sauté for 2-3 minutes until fragrant and translucent.
  4. Add diced carrot, bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until vegetables start to soften.
  5. Add the cooked rice to the skillet along with green peas, soy sauce, and lime juice. Stir well to combine and heat through, about 3-4 minutes.
  6. Mix in chopped basil and cilantro, and season with salt, pepper, and chili flakes if using. Cook for another minute.
  7. Serve hot, garnished with additional fresh herbs if desired.
