- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Vegetable broth - 100 ml
- Fresh cilantro - a handful, chopped
- Lime - 1, cut into wedges

Steps
- Rinse the jasmine rice under cold water until the water runs clear. Cook it according to package instructions and set aside.
- In a large pan or wok, heat the coconut oil over medium heat. Add the chopped ginger and minced garlic, sautéing for 1-2 minutes until fragrant.
- Add the diced carrot, bell pepper, and green beans to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the cooked jasmine rice, soy sauce, and vegetable broth. Mix well and cook for an additional 3-5 minutes, allowing the rice to absorb the flavors.
- Add the chopped spring onions and cilantro, seasoning with salt and pepper to taste. Stir everything together until well combined.
