Ingredients

  • Jasmine rice - 150 grams
  • Vegetable broth - 400 ml
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green peas - 100 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2 small, finely chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Fresh basil leaves - 10 grams
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, bring the vegetable broth to a boil, add the rinsed rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
  4. Add the diced carrot, red bell pepper, and zucchini to the skillet, stirring frequently for about 5 minutes until they begin to soften.
  5. Stir in the green peas, cooked rice, soy sauce, oyster sauce, salt, and black pepper. Mix thoroughly and cook for an additional 3-5 minutes to heat through.
  6. Remove from heat and gently fold in fresh basil leaves.
  7. Serve hot with lime wedges on the side for squeezing over the dish.
