  • Red bell pepper - 1 medium, sliced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Thai red curry paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Peanuts - 30 grams, crushed (for garnish)
  • Salt - to taste
  • Vegetable oil - 2 tablespoons

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, bring the vegetable broth to a boil, add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

  7. Add the carrot, red bell pepper, and green beans to the skillet, cooking for about 5-7 minutes until the vegetables are tender yet crisp.
