Ingredients

  • Jasmine rice - 150 grams
  • Crab meat (cooked and picked) - 100 grams
  • Eggs - 2 large
  • Shallots, finely chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Carrot, diced - 50 grams
  • Green peas - 50 grams
  • Green onions, sliced - 2 tablespoons
  • Soy sauce (kosher) - 2 tablespoons
  • Fish sauce (kosher) - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Lime wedges - for serving
  • Fresh cilantro, chopped - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, cook the soaked rice with 250 ml of water over medium heat until the water is absorbed and the rice is fluffy. This should take about 15-20 minutes. Once done, let it cool.
  3. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and chopped shallots, sautéing until fragrant.
  4. Add the diced carrot and green peas to the wok, stirring for about 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the wok and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  6. Add the cooled jasmine rice to the wok, along with the crab meat, soy sauce, fish sauce, salt, and black pepper. Stir-fry everything together for about 5 minutes, ensuring the rice is heated through and well mixed.
  7. Fold in the sliced green onions and remove the wok from heat.
  8. Serve the fried rice hot, garnished with fresh cilantro and lime wedges on the side.
