Ingredients
- Jasmine rice - 150 grams
- Crab meat (cooked and picked) - 100 grams
- Eggs - 2 large
- Shallots, finely chopped - 2 tablespoons
- Garlic, minced - 1 clove
- Carrot, diced - 50 grams
- Green peas - 50 grams
- Green onions, sliced - 2 tablespoons
- Soy sauce (kosher) - 2 tablespoons
- Fish sauce (kosher) - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Lime wedges - for serving
- Fresh cilantro, chopped - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
- In a large pot, cook the soaked rice with 250 ml of water over medium heat until the water is absorbed and the rice is fluffy. This should take about 15-20 minutes. Once done, let it cool.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and chopped shallots, sautéing until fragrant.
- Add the diced carrot and green peas to the wok, stirring for about 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the wok and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooled jasmine rice to the wok, along with the crab meat, soy sauce, fish sauce, salt, and black pepper. Stir-fry everything together for about 5 minutes, ensuring the rice is heated through and well mixed.
- Fold in the sliced green onions and remove the wok from heat.
- Serve the fried rice hot, garnished with fresh cilantro and lime wedges on the side.
