  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Toasted cashews - 30 grams, chopped (for garnish)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced carrot and red bell pepper to the skillet, stirring frequently, and cook for about 3-4 minutes until they begin to soften.
  4. Stir in the green peas and cook for an additional 2 minutes.
  5. Once the rice is cooked, add it to the skillet along with the diced mango, soy sauce, lime juice, salt, and black pepper. Mix everything well and cook for another 2-3 minutes until heated through.
  6. Remove from heat and stir in the chopped cilantro.
