Ingredients

  • Jasmine rice - 200 grams
  • Coconut milk - 150 ml
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Green peas - 100 grams
  • Red onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. In a large skillet or wok, heat the olive oil over medium heat. Add the sliced red onion and minced garlic, sauté for 2-3 minutes until aromatic.
  4. Add the diced carrot and bell pepper to the skillet, cooking for an additional 5 minutes until they soften.
  5. Stir in the green peas, cooked jasmine rice, and coconut milk. Mix well to combine and heat through.
  6. Add soy sauce, lime juice, salt, black pepper, and chili flakes if using. Stir well and cook for another 2-3 minutes.
  7. Remove from heat and fold in the chopped basil and cilantro. Adjust seasoning if needed.
  8. Serve hot, garnished with additional herbs if desired.
