Ingredients
- Jasmine rice - 200 grams
- Coconut milk - 150 ml
- Carrot - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Green peas - 100 grams
- Red onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh basil leaves - 10 grams, chopped
- Cilantro - 10 grams, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a large skillet or wok, heat the olive oil over medium heat. Add the sliced red onion and minced garlic, sauté for 2-3 minutes until aromatic.
- Add the diced carrot and bell pepper to the skillet, cooking for an additional 5 minutes until they soften.
- Stir in the green peas, cooked jasmine rice, and coconut milk. Mix well to combine and heat through.
- Add soy sauce, lime juice, salt, black pepper, and chili flakes if using. Stir well and cook for another 2-3 minutes.
- Remove from heat and fold in the chopped basil and cilantro. Adjust seasoning if needed.
- Serve hot, garnished with additional herbs if desired.
