- Jasmine rice - 200 grams
- Water - 400 milliliters
- Coconut oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallots, finely chopped - 2 medium
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Green peas, fresh or frozen - 100 grams
- Soy sauce (or tamari for gluten-free) - 3 tablespoons
- Thai basil leaves - 1/2 cup
- Lime juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Chili flakes (optional) - 1 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and 400 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, heat the coconut oil in a large skillet over medium heat.
- Add the minced garlic and chopped shallots to the skillet and sauté for 2-3 minutes until fragrant.
- Add the diced carrot and red bell pepper to the skillet, cooking for another 5 minutes until the vegetables start to soften.
- Stir in the green peas and cook for an additional 2 minutes.
- Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables.
- Pour in the soy sauce, lime juice, and season with salt, black pepper, and chili flakes if using. Toss everything together until well combined and heated through.
- Remove from heat and fold in the Thai basil leaves.
- Serve hot, garnished with extra basil leaves or lime wedges if desired.
