Ingredients

  • Jasmine rice - 200 grams
  • Water - 400 milliliters
  • Coconut oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallots, finely chopped - 2 medium
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Green peas, fresh or frozen - 100 grams
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons
  • Thai basil leaves - 1/2 cup
  • Lime juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes (optional) - 1 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and 400 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  3. While the rice is cooking, heat the coconut oil in a large skillet over medium heat.
  4. Add the minced garlic and chopped shallots to the skillet and sauté for 2-3 minutes until fragrant.
  5. Add the diced carrot and red bell pepper to the skillet, cooking for another 5 minutes until the vegetables start to soften.
  6. Stir in the green peas and cook for an additional 2 minutes.
  7. Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables.
  8. Pour in the soy sauce, lime juice, and season with salt, black pepper, and chili flakes if using. Toss everything together until well combined and heated through.
  9. Remove from heat and fold in the Thai basil leaves.
  10. Serve hot, garnished with extra basil leaves or lime wedges if desired.
