- Jasmine rice - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallots, thinly sliced - 2 medium
- Carrot, diced - 1 medium
- Green bell pepper, diced - 1 medium
- Zucchini, diced - 1 medium
- Snow peas, trimmed - 100 grams
- Soy sauce - 2 tablespoons
- Vegetarian oyster sauce - 1 tablespoon
- White pepper - 1/2 teaspoon
- Fresh basil leaves - 1/2 cup
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
- In a medium pot, cook the rice with 400 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent, about 2 minutes.
- Add the diced carrot, green bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
- Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir in the snow peas, soy sauce, vegetarian oyster sauce, and white pepper. Mix thoroughly and cook for an additional 3-4 minutes until heated through.
- Remove from heat and fold in the fresh basil leaves until just wilted.
- Serve hot with lime wedges on the side.
