  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Green onions, sliced - 2 tablespoons
  • Lime wedges - 2 for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and let it cool.
  2. Heat vegetable oil in a large skillet or wok over medium heat.
  3. Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2 minutes.
  4. Stir in the diced carrots and cook for another 2 minutes until they begin to soften.
  5. Add the green peas and bell pepper, cooking for an additional 3 minutes.
  6. Increase the heat to high and add the cooked rice to the skillet, breaking up any clumps.
  7. Pour in the soy sauce and vegetarian oyster sauce, mixing everything well, and stir-fry for about 5 minutes until heated through.
  8. Season with black pepper and stir in chopped cilantro and green onions just before serving.
