- Red bell pepper - 1, diced
- Green beans - 100 grams, trimmed and chopped
- Carrot - 1 medium, julienned
- Soy sauce - 2 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh Thai basil leaves - 1 cup, packed
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 400 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked. Remove from heat and let it stand, covered, for another 5 minutes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and chopped shallots, sautéing for 1-2 minutes until fragrant.
- Add the diced red bell pepper, chopped green beans, and julienned carrot to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- Stir in the cooked jasmine rice, soy sauce, vegetarian oyster sauce, sugar, and black pepper. Mix well to combine all ingredients, cooking for an additional 2-3 minutes until heated through.
- Remove the skillet from heat and fold in the fresh Thai basil leaves until wilted.
- Serve hot with lime wedges on the side for squeezing over the dish.
