  • Shallots - 2, finely chopped
  • Red bell pepper - 1, diced
  • Green beans - 100 grams, trimmed and chopped
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh Thai basil leaves - 1 cup, packed
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 400 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked. Remove from heat and let it stand, covered, for another 5 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and chopped shallots, sautéing for 1-2 minutes until fragrant.
  3. Add the diced red bell pepper, chopped green beans, and julienned carrot to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  4. Stir in the cooked jasmine rice, soy sauce, vegetarian oyster sauce, sugar, and black pepper. Mix well to combine all ingredients, cooking for an additional 2-3 minutes until heated through.
  5. Remove the skillet from heat and fold in the fresh Thai basil leaves until wilted.
  6. Serve hot with lime wedges on the side for squeezing over the dish.
