- Oyster sauce (vegetarian) - 1 tablespoon
- Coriander leaves, chopped - 2 tablespoons
- Green onions, chopped - 2 stalks
- Lime wedges, for serving - 2
Steps
- Rinse the Jasmine rice under cold water until the water runs clear, then cook the rice according to package instructions. Allow it to cool slightly.
- Heat the vegetable oil in a large pan or wok over medium heat. Add minced garlic and chopped shallots, sautéing until they become fragrant and translucent.
- Add the diced carrot and bell pepper to the pan and stir-fry for about 3-4 minutes until they start to soften.
- Stir in the green peas and cook for an additional 2 minutes, mixing well with the vegetables.
- Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce and vegetarian oyster sauce, stirring everything together until the rice is evenly coated and heated through.
- Remove the pan from heat and fold in the chopped coriander leaves and green onions.
- Serve the Khao Pad Khao Khao Jay hot, garnished with lime wedges on the side for an extra burst of flavor.
