Ingredients
- Jasmine rice - 150 grams
- Chicken breast, diced - 200 grams
- Carrot, julienned - 50 grams
- Green beans, chopped - 50 grams
- Garlic, minced - 2 cloves
- Shallots, sliced - 1 medium
- Soy sauce (kosher) - 2 tablespoons
- Oyster sauce (kosher) - 1 tablespoon
- Egg - 1 large
- Vegetable oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, bring 300 ml of water to a boil. Add the soaked rice, reduce heat to low, cover, and simmer for 15 minutes until cooked. Fluff with a fork and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and sliced shallots, sauté until fragrant, about 1-2 minutes.
- Add the diced chicken breast to the skillet, cooking until browned and cooked through, around 5-7 minutes.
- Stir in the julienned carrots and chopped green beans, cooking for an additional 3-4 minutes until the vegetables are tender but still crisp.
- Push the chicken and vegetables to one side of the skillet. Crack the egg into the empty space and scramble it until fully cooked, then mix it into the chicken and vegetable mixture.
- Add the cooked jasmine rice to the skillet, along with soy sauce, oyster sauce, salt, and black pepper. Stir-fry everything together for about 3-4 minutes until well combined and heated through.
- Remove from heat and stir in the chopped cilantro. Serve hot with lime wedges on the side.
