Ingredients

  • Jasmine rice - 1 cup (200g)
  • Chicken breast - 150g, diced
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup (75g)
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon (ensure it's dairy-free)
  • Egg - 1 large (optional, for added protein)
  • Green onions - 2 stalks, chopped
  • Cilantro - a handful, for garnish
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and chopped shallots, sautéing until fragrant and golden, about 1-2 minutes.
  3. Add the diced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
  4. Stir in the diced carrot and green peas, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Push the chicken and vegetables to one side of the skillet. If using, crack the egg into the empty side, scramble it until fully cooked, then mix it with the chicken and vegetables.
  6. Add the soaked jasmine rice to the skillet, breaking up any clumps. Pour in the soy sauce and oyster sauce, stirring everything together until the rice is heated through and well-coated in sauce, about 3-4 minutes.
  7. Add the chopped green onions and stir-fry for another minute. Remove from heat.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.
