- Jasmine rice - 150 grams
- Water - 300 ml
- Vegetable oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallots, chopped - 2 tablespoons
- Carrots, diced - 1 medium
- Green peas - 100 grams
- Bell pepper, diced - 1 medium (any color)
- Soy sauce - 2 tablespoons
- Vegetable broth powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro, chopped - 2 tablespoons
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 20 minutes.
- In a saucepan, combine the soaked rice with 300 ml of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the diced carrots, green peas, and bell pepper to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender.
- Stir in the cooked jasmine rice, soy sauce, vegetable broth powder, salt, and black pepper. Mix well and cook for another 2-3 minutes until heated through.
- Remove from heat and stir in chopped fresh cilantro.
- Serve hot, garnished with lime wedges on the side.
