Ingredients

  • Jasmine rice - 150 grams
  • Shrimp, peeled and deveined - 200 grams
  • Eggs - 2 large
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 small
  • Carrot, diced - 50 grams
  • Green peas - 50 grams
  • Spring onions, chopped - 2 stalks
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cilantro, chopped - for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the jasmine rice according to package instructions and set aside to cool slightly.
  2. Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium heat.
  3. Add the minced garlic and chopped onion to the skillet, sautéing for about 2 minutes until fragrant.
  4. Add the diced carrot and green peas, cooking for another 3-4 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and add the remaining tablespoon of oil.
  6. Crack the eggs into the skillet, scrambling them until fully cooked, then mix them with the vegetables.
  7. Add the cooked jasmine rice to the skillet, stirring well to combine all the ingredients.
  8. Add the shrimp, soy sauce, fish sauce, lime juice, salt, and pepper, stirring continuously until the shrimp are cooked through, about 3-4 minutes.
  9. Fold in the chopped spring onions and remove from heat.
  10. Serve hot, garnished with chopped cilantro.
