- Eggs - 2 large
- Garlic, minced - 2 cloves
- Onion, chopped - 1 small
- Carrot, diced - 50 grams
- Green peas - 50 grams
- Spring onions, chopped - 2 stalks
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cilantro, chopped - for garnish
- Salt - to taste
- Pepper - to taste
Steps
- Cook the jasmine rice according to package instructions and set aside to cool slightly.
- Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium heat.
- Add the minced garlic and chopped onion to the skillet, sautéing for about 2 minutes until fragrant.
- Add the diced carrot and green peas, cooking for another 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the remaining tablespoon of oil.
- Crack the eggs into the skillet, scrambling them until fully cooked, then mix them with the vegetables.
- Add the cooked jasmine rice to the skillet, stirring well to combine all the ingredients.
- Add the shrimp, soy sauce, fish sauce, lime juice, salt, and pepper, stirring continuously until the shrimp are cooked through, about 3-4 minutes.
- Fold in the chopped spring onions and remove from heat.
- Serve hot, garnished with chopped cilantro.
