Ingredients

  • Cauliflower - 300 grams
  • Ground chicken or turkey - 250 grams
  • Fresh cilantro - 30 grams, chopped
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Egg - 1 large
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Coconut flour - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut oil - 2 tablespoons (for frying)
  • Lettuce leaves - 4 large (for wrapping)
  • Sliced cucumber - 1/2 cucumber
  • Sliced tomato - 1 medium
  • Sriracha or chili sauce - optional, for serving

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of coconut oil.
  2. In a food processor, pulse the cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  3. In a mixing bowl, combine the ground chicken or turkey, cauliflower rice, chopped cilantro, green onion, minced garlic, egg, fish sauce, lime juice, coconut flour, salt, and black pepper. Mix until well combined.
  4. Form the mixture into 2 patties, about 1.5 cm thick.
  5. In the preheated skillet, add the remaining tablespoon of coconut oil and cook the patties for about 5-7 minutes on each side or until golden brown and cooked through.
  6. Remove the patties from the skillet and let them rest for a minute.
  7. To assemble, place each patty in a large lettuce leaf, top with cucumber slices and tomato slices, and drizzle with Sriracha or chili sauce if desired.
  8. Wrap the lettuce around the patty and enjoy your Khao Pad Burger!
