Ingredients

  • Jasmine rice - 200 grams (cooked and cooled)
  • Eggs - 2 large
  • Chicken breast - 100 grams (diced)
  • Carrot - 50 grams (finely diced)
  • Green peas - 50 grams (fresh or frozen)
  • Spring onions - 2 stalks (finely chopped)
  • Garlic - 2 cloves (minced)
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. In a large pan or wok, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced chicken breast to the pan and cook until it's no longer pink, about 5-7 minutes.
  4. Push the chicken to one side of the pan and crack the eggs into the other side, scrambling them until fully cooked.
  5. Mix the chicken and eggs together, then add the diced carrots and green peas, stirring for another 2-3 minutes.
  6. Add the cooked jasmine rice to the pan, breaking up any clumps, and mix everything together thoroughly.
  7. Drizzle the soy sauce and fish sauce over the mixture, stirring well to combine and heat through.
  8. Add the chopped spring onions and black pepper, stirring for an additional minute.
  9. Remove from heat, garnish with fresh cilantro, and serve hot.
