- Jasmine rice - 200 grams (cooked and cooled)
- Eggs - 2 large
- Chicken breast - 100 grams (diced)
- Carrot - 50 grams (finely diced)
- Green peas - 50 grams (fresh or frozen)
- Spring onions - 2 stalks (finely chopped)
- Garlic - 2 cloves (minced)
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - to taste
- Cilantro - for garnish
Steps
- In a large pan or wok, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced chicken breast to the pan and cook until it's no longer pink, about 5-7 minutes.
- Push the chicken to one side of the pan and crack the eggs into the other side, scrambling them until fully cooked.
- Mix the chicken and eggs together, then add the diced carrots and green peas, stirring for another 2-3 minutes.
- Add the cooked jasmine rice to the pan, breaking up any clumps, and mix everything together thoroughly.
- Drizzle the soy sauce and fish sauce over the mixture, stirring well to combine and heat through.
- Add the chopped spring onions and black pepper, stirring for an additional minute.
- Remove from heat, garnish with fresh cilantro, and serve hot.
