Ingredients
- Sticky rice - 200 grams
- Mung beans - 100 grams
- Coconut milk - 150 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Pandan leaves - 2 (optional for aroma)
Steps
- Soak the sticky rice in water for at least 4 hours or overnight.
- Rinse the mung beans and soak them in water for 2 hours.
- Steam the soaked sticky rice for 30 minutes until tender.
- While the rice is steaming, drain the mung beans and steam them as well for about 15-20 minutes until soft.
- In a small saucepan, combine coconut milk, sugar, and salt over low heat, stirring until the sugar dissolves. Add pandan leaves if using.
- Once the mung beans are cooked, mash them with a fork or potato masher, then mix in half of the sweetened coconut milk.
- To serve, place a portion of sticky rice on a plate, top with the mung bean mixture, and drizzle with the remaining sweetened coconut milk.
