Ingredients
- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Salt - 1/4 teaspoon
- Sugar - 2 tablespoons
- Cornstarch - 1 tablespoon
- Oil (for frying) - 2 tablespoons
- Ripe mango - 1 medium, sliced
- Sesame seeds (optional) - 1 tablespoon
Steps
- Soak the sticky rice in water for at least 4 hours or overnight.
- Drain the soaked sticky rice and steam it in a bamboo steamer or a metal steamer for about 20 minutes until cooked and tender.
- In a small saucepan, combine the coconut milk, salt, and sugar. Heat gently until the sugar dissolves and the mixture is warm (do not boil).
- Once the sticky rice is cooked, transfer it to a mixing bowl and pour the coconut milk mixture over it. Mix well until the rice is fully coated and let it cool for about 10 minutes.
- Once cooled, add cornstarch to the sticky rice mixture and knead it gently until it forms a dough-like consistency.
- Divide the mixture into small portions and shape them into flat patties, about 1 cm thick.
- Heat oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
- Remove the patties from the pan and place them on paper towels to absorb excess oil.
- Serve the crispy coconut sticky rice patties warm with fresh mango slices on the side. Sprinkle sesame seeds on top if desired.
