Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Salt - 1/4 teaspoon
  • Sugar - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Oil (for frying) - 2 tablespoons
  • Ripe mango - 1 medium, sliced
  • Sesame seeds (optional) - 1 tablespoon

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight.
  2. Drain the soaked sticky rice and steam it in a bamboo steamer or a metal steamer for about 20 minutes until cooked and tender.
  3. In a small saucepan, combine the coconut milk, salt, and sugar. Heat gently until the sugar dissolves and the mixture is warm (do not boil).
  4. Once the sticky rice is cooked, transfer it to a mixing bowl and pour the coconut milk mixture over it. Mix well until the rice is fully coated and let it cool for about 10 minutes.
  5. Once cooled, add cornstarch to the sticky rice mixture and knead it gently until it forms a dough-like consistency.
  6. Divide the mixture into small portions and shape them into flat patties, about 1 cm thick.
  7. Heat oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
  8. Remove the patties from the pan and place them on paper towels to absorb excess oil.
  9. Serve the crispy coconut sticky rice patties warm with fresh mango slices on the side. Sprinkle sesame seeds on top if desired.
