Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 100 ml
  • Lime - 1, juiced
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Green onion - 2, finely sliced
  • Carrot - 1 medium, grated
  • Cucumber - 1/2, thinly sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20 minutes, or until tender.
  3. In a small saucepan, heat the coconut milk over low heat and stir in the lime juice, salt, and black pepper. Remove from heat once warm.
  4. In a large bowl, combine the steamed sticky rice with the coconut milk mixture, ensuring the rice is evenly coated.
  5. Add the chopped cilantro, mint, green onion, grated carrot, and cucumber to the rice, mixing gently to combine all ingredients.
  6. Taste and adjust seasoning with additional salt, lime juice, or chili flakes if desired.
  7. Serve the Khao Niew Som warm or at room temperature, garnished with extra herbs if desired.
