Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 milliliters
  • Maple syrup - 50 grams
  • Tapioca starch - 30 grams
  • Pandan leaves - 2 pieces (or pandan extract - 1 teaspoon)
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Water - 300 milliliters (for steaming)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam the rice for about 25-30 minutes until it is fully cooked and sticky.
  3. While the rice is steaming, prepare the coconut custard. In a mixing bowl, combine the coconut milk, maple syrup, tapioca starch, salt, vanilla extract, and finely chopped pandan leaves (or pandan extract).
  4. Whisk the mixture until smooth and well combined. Strain through a fine sieve to remove any lumps and pandan pieces.
  5. Once the sticky rice is done, remove it from the steamer and transfer half of it to a greased square or rectangular dish, pressing it down evenly.
  6. Pour half of the coconut custard mixture over the sticky rice, spreading it evenly. Top with the remaining sticky rice and then pour the rest of the custard mixture on top.
  7. Cover the dish with aluminum foil and steam over simmering water for another 20-25 minutes until the custard is set and firm.
  8. Remove from the steamer and let it cool slightly before slicing into squares. Serve warm or at room temperature.
