Ingredients

  • Sticky rice - 150 grams
  • Mango (ripe) - 1 large (about 200 grams)
  • Coconut milk - 150 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Sesame seeds (toasted) - 1 tablespoon
  • Coconut flakes (optional) - 1 tablespoon

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 25-30 minutes until cooked and tender.
  3. In a small saucepan, combine the coconut milk, sugar, and salt. Heat gently over low heat until the sugar dissolves, but do not bring it to a boil.
  4. Once the rice is cooked, transfer it to a bowl and pour about 100 ml of the coconut sauce over it. Mix well and let it sit for about 10 minutes to absorb the flavors.
  5. While the rice is resting, peel and slice the mango into thin strips.
  6. To serve, place a portion of the coconut sticky rice on a plate, arrange the mango slices on top, and drizzle with the remaining coconut sauce.
  7. Garnish with toasted sesame seeds and coconut flakes if desired.
